How to Cook Fried Rice with Chorizo

Last night, we overestimated rice servings so this morning we still have more than a handful of leftover white rice. Well, I cannot let it go to waste considering that I store it inside the fridge and some people are not lucky to have three meals a day. I made a quick sniff if the rice is spoiled and it was not.



Before I closed the fridge, I noticed the chorizo we had for yesterday's lunch. There are still three sausages left and the fried rice will be tastier if I will include it. By the way, chorizo is a pork sausage. In absence of chorizo, you can pick any type of sausage on stock at home.

My ingredients:
- leftover rice
- chorizo or pork meat or any sausage substitute
- mixed vegetables of carrot, corn, and green peas
- garlic, chopped
- onion, chopped
- cooking oil
- salt and pepper to taste


Preparations:
1. Dispersed or break the rice into pieces using the hands. If the rice is hard to break, add a small amount of water to moisten it. Set aside.
2. In a separate pan, cook the mixed vegetables in a boiling water and set aside.
3. In a big pan, pour in cooking oil.
4. Add the garlic, brown a bit then add the onion until translucent.
5. Toss and mix the chorizo in the pan. Let it brown.
6. Add the mixed vegetables and stir for less than a minute.
7. Then add the rice and continue to stir it.
8. Season it with salt and pepper.
9. Stop cooking if the moist from the rice is lesson. Approximate cooking time is less than 10 minutes.

This fried rice with chorizo is heaven. Add ham and cheesedog to make a HamSiDog then breakfast served.
